Italian Bruschetta with Tomato and Basil

Wondering what is the most popular Appetizer? I have an option to consider for you – A classic Italian appetizer or  ‘antipasto’ – called Bruschetta. As it has a variety of options, my favorite one is with Tomato and Basil, and the best thing here is the time you need to prepare it. You literally need a couple of minutes to enjoy it. It is as simple as it sounds, a mixture of chopped tomatoes, basil leaves, and garlic spooned over olive-oil brushed slices of grilled baguette or rustic bread. Let me show you how I do it.

Bruschetta Ingredients

  • 4 tomatoes
  • 1-2 garlic cloves
  • 3 basil leaves
  • 1/2 baguette
  • olive oil to taste
  • salt to taste

Bruschetta Instructions

  1. Chop the tomatoes
  2. Chop the basil leaves
  3. Add chopped tomatoes and basil leaves into a container
  4. Add Olive oil and salt to the taste and mix it up.
  5. Slice 1/2 baguette
  6. Use a medium heat and a grill pan for your baguette slices
  7. Rub the bread with garlic cloves
  8. Dress the bread slices with your tomato and basil mixture
  9. Enjoy!

Borsch or What is wrong with this red soup without meat?

Welcome to another Snack With Mary Recipe! Have you ever tried Borsch, no it is not a weird red soup. If not, it is a perfect time for you to try something new, healthy and very delicious. In Russia, Ukraine, Moldova and other post-Soviet Union countries with similar culture, Borsch is a test drive for your future wife  Don’t worry I will be your guide today, let’s get started with the most important first.

Borsch Ingredients

You will need the following fresh ingredients:

  • 1 onion
  • 2 carrots
  • 1 red pepper
  • 1 tomato
  • 2 beetroots (that magic ingredient that colors in red)
  • 1 small bunch of parsley
  • 4tbsp olive oil
  • 1/3 cabbage
  • 3 medium potatoes
  • 15 cups of water
  • 1tbsp of sour cream
  • 1/2 lemon
  • previously cooked beans
Borsch Ingredients: pepper, potato, tomato, beetroots, onion, cabbage

Borsch Instructions:

Step 1: Prepare the Vegetables

  1. Chop the onion
  2. Shred carrots with a grater
  3. Cut 1 red pepper
  4. Chop 1 tomato
  5. Shred beetroots with a grater
  6. Chop a bunch of parsley
  7. Cut 1/3 cabbage
  8. Cut 3 medium potatoes

Step 2: Sautéed vegetables

  1. Add 4tbsp of olive oil on a frying pan and
  2. Chopped onion,
  3. Shredded carrots, red pepper, and beetroots.
  4. Saute vegetables about 10 minutes

Step 3: Boil Cabbages and Potatoes

  1. In a large saucepan add cabbage and potatoes filled with 15 cups of water
  2. Bring to boil Cabbage and Potatoes
  3. Add the sautéed vegetables from Step 2
  4. Cook Until Cabbage and Potatoes are Done
  5. Time to add Previously Cooked beans
  6. As well as Lemon Juice
  7. Season to Taste with Salt
  8. Add Chopped Parsley
  9. Serve with 1tbsp of Sour Cream

Caesar Salad with Grilled Chicken. The world’s famous salad

Welcome to another Snack With Mary Ultimate Caesar Salad Recipe! If you are thinking about something light, healthy and tasty – this is the right place, please welcome the worlds famous Caesar Salad with Grilled Chicken! There is a small secret I would like to share before we start,  fresh food is the key to a tasty meal, so those tasty cherry tomatoes might be the magic ingredient!

So, let’s get started –  Make sure you have all the necessary ingredients and tools.

Caesar Salad: Ingredients

  • 1 lettuce
  • about 20 cherry tomatoes
  • 1 chicken breast
  • 1/4 fresh baguette
  • 1 egg
  • 2 garlic clove
  • 1tsp mustard
  • 30g parmesan cheese
  • 1tsp olive oil
  • salt & pepper
  • 1/2 lemon

Caesar Salad: Tools

Besides the ingredients the following tools might be handy:

  • Large mixing bowl
  • Mixer
  • Grill Pan
  • Cutting board
  • Knife
  • Fork
  • Citrus Squeezer
  • Ramekin or small cup

Caesar Salad: Instructions

Step 1: Prepare the Caesar Sauce

  1. Boil 1 egg for just one minute
  2. In a mixer, add boiled egg(clean), 1/2 squeezed lemon juice, 1 garlic clove, 1tsp mustard, 30g parmesan cheese and mix everything.

Step 2: Prepare the Croutons for Caesar Salad

  1. Cut 1/4 fresh baguette up to the croutons.
  2. Add 1 garlic clove
  3. A little bit of olive oil for the croutons
  4. Bake the croutons 8-10 minutes in preheated oven 180 Celsius degrees.

Step 3: Prepare the Grilled Chicken Breast

  1. On a small plate put the chicken breast and add a bit salt, pepper and olive oil on both sides.
  2. Put the chicken breast on a grill pan using medium heat
  3. Don’t forget to grill both sides

Step 4: Arrange the salad

  1. In a large mixing bowl cut and mix lettuce, cherry tomatoes and a bit of caesar sauce
  2. Take 2 plates and split the mixing
  3. Add grilled chicken breast to each plate in a free form
  4. Croutons to each plate
  5. Caesar sauce
  6. Parmesan cheese

Hummus Ultimate Recipe: Easy, healthy and very delicious!

Welcome to another Snack With Mary Recipe. In the middle east, Hummus popularity is overwhelming and I can understand why – this is a very very delicious and healthy choice. I encourage you to skip the store-bought hummus, making it yourself is easy and will be far tastier than just about anything from your local Costco or any other store. I always thought that it would take a lot of time and effort to prepare it, but the reality is much more simple and you need less than 30 minutes (someone can do it in less than 15 minutes) to get it on your plates. Let me be your guide in the world of creating Hummus.

Hummus ingredients: Pre-cooked chickpeas

Hummus Ingredients:

  • 500g pre-cooked chickpeas + some chickpeas for decoration
  • 2 tbsp tahini
  • 4tbsp olive oil
  • 1 to 4 garlic cloves
  • salt
  • parsley
  • paprika

Hummus Instructions:

  1. Pre-cook 550-600g chickpeas.
  2. In a blender, cup adds 500g pre-cooked chickpeas, 2tbsp tahini.
  3. Squeeze 1/2 lemon
  4. Add 1 to 4 garlic cloves to your taste (I used to put 3 and it was kind of too much for me)
  5. Add 1/2 tsp of salt
  6. Mix it all in a blender
  7. Put your mixture in the plate and give it a form, creating a round hole in the center
  8. Fill the hole with chickpeas for decoration purpose
  9. Chop the parsley and put it on the top of your hummus plate for decoration
  10. Add Paprika and Olive Oil to the taste
  11. That’s it, wasn’t that easy?

Greek Chicken with Lemon-Yogurt Sauce

Welcome to Snack With Mary Food Blog. Today I would like to bring a warm and tasty Greek Chicken plate into your dining room. This dish is full of flavors, colors, and healthy ingredients. It is not that simple Greek Chicken, the beauty here is the Lemon-Yogurt sauce served with Warm Orzo Salad with Zucchini & Sundried Tomatoes. Excited? Are you ready? Let’s get it started…

Greek Chicken Ingredients

This recipe is serving 2, you can double the ingredients for 4 portions.

  • 4 chicken thighs
  • 1 lemon
  • 2 zucchini
  • 142 g orzo
  • 30g sundried tomatoes
  • 100g greek yogurt
  • 10g Mediterranean spice
  • olive oil
  • salt & pepper

Greek Chicken Instructions

1. Cook the orzo

Bring a medium pot of water to boil. Salt it and add the orzo. Cook it following the instructions on the pack, until just tender. Thoroughly drain the orzo, toss with a drizzle of olive oil to prevent sticking and set aside.

2. Cook the chicken

While the orzo cooks, in a large pan, heat a drizzle of olive oil on medium-high. Pat the chicken dry with paper towel, season with Mediterranean spice and salt & pepper. Add the seasoned chicken to the pan and cook partially covered, on both sides until golden brown (about 5-6 minutes per side). Transfer to a plate.

Greek Chicken: Step 2 Cook the Chicken

3. Prepare the vegetables

While the chicken cooks, small dice the zucchini. Thinly slice the sundried tomatoes. Zest and juice the lemon. In a bowl combine the Greek yogurt with lemon juice, and 1tbsp olive oil, season with salt and pepper to taste.

4. Cook the vegetables

In a large pan, heat a drizzle of olive oil on the medium. Add the zucchini salt and pepper to taste. Cook, stirring frequently, until beginning to soften. Add the sundried tomatoes and cook, stirring frequently for a couple of minutes.

5. It’s serving time

Divide the cooked orzo and vegetables between your plates. Top with the chicken and garnish with lemon zest and lemon-yogurt sauce. I would also recommend a Caprese Salad as a side dish for this meal, try it out and let me know how you liked!

Chicken Curry that will delight your sense from the first bite.

Travel with us to the world of herbs and spices. Our chicken curry is going to delight your sense from the first to the very last bite. It’s not the regular chicken curry, this recipe includes Fresh Mushrooms, Bell Peppers, Zucchini Served with Basmati Rice.

Chicken Curry Ingredients

This recipe is serving 2, you can double the ingredients for 4 portions.

  • 3/4 cups Basmati Rice
  • Chicken Breast (1)
  • 165 ml Coconut Milk
  • Red Bell Pepper (1)
  • Yellow Onion (1)
  • Zucchini (1)
  • Garlic Clove (1)
  • 3 tsp Curry
  • 1tbs olive oil
  • 1 1/2 cups Water for Rice
  • salt

Chicken Curry Instructions

1. Cook the rice

Rinse rice at least 3 times in cold water and drain. Bring rice and water to boil in a pot over high heat. Reduce heat to low, cover and cook for about 15-20 min, until tender. Toss with a drizzle of olive oil to prevent sticking and set aside.

2. Prepare the ingredients

While the rice cooks, mince the onion, the garlic, mushrooms, the bell pepper, and zucchini. Dice the chicken.

3. Cook the chicken

In a heavy saucepan over medium heat, cook the onion and the garlic in the olive oil for 3 minutes. Add the chicken cubes and cook for 2 more minutes.

4. Add the vegetables

Add the mushrooms, zucchini and bell pepper and cook for 5 minutes.

5. Season time

Add the curry powder and mix very well.

6. Finish the dish and serve

Pour in the coconut milk and let cook for 10 min. Season to taste with salt and pepper. In a deep plate, place the rice and add the chicken curry.

Greek Salad – Last Minute Lunch Idea

Had a busy day? This delicious, easy meal is full of protein and flavor. You’ll need less than 10 minutes to fill your tummy with fresh and crunchy vitamins.

All you’ll need:

Greek Salad Ingredients

  • 1/2 English cucumber or 2 small cucumbers
  • 3 tomatoes
  • A small bunch of cherry tomatoes
  • 1/2 green pepper
  • 1/4 red onion
  • Olives (Termite di Bitetto)
  • Feta cheese (100g per portion)
  • Olive oil
  • Salt
  • Oregano and chili flakes(Optional)

How to make a Steak Sandwich with Caramelized Onion

One of my favorites, join me for this delicious recipe if you don’t like caramelized onion – that is not an issue ignore the onion preparation part and focus only on steak sandwich which is fantastic on its own. Make sure you select a good piece of steak to enjoy your sandwich, the better the steak the more you will enjoy your sandwich!

Ingredients

  • Medium beef steaks (2)
  • One yellow onion (sliced)
  • Ciabatta Bun (2)
  • Balsamic Vinegar (2 tbsp)
  • Garlic clove (2)
  • Mayonnaise (4 tbsp)
  • Sugar (1 tsp)
  • Olive oil
  • Salt and Pepper

Tools:

  1. Large mixing bowl
  2. Garlic press
  3. Large non-stick pan
  4. Measuring Spoons
  5. Grill pan

Instructions:

1.Caramelize Onions 

Heat a large non-stick pan over medium heat. Add 1 tbsp olive oil and onions. Cook, stirring occasionally until softened, about 4 min. Add 1tsp sugar and season with salt to taste. Continue to cook stirring occasionally, until onions are golden-brown, about 10 min. When onions are done, remove the pan from heat. Add 2 tbsp balsamic vinegar. Stir together 1 min. Transfer caramelized onions into a small bowl and set aside.

2. Cook the Steak

Same as for the previous steap start by heating a large non-stick pan over medium-high heat. You can use the same pan just wipe carefully with a paper tower. When the pan is hot, add 1tbsp olive oil, then steak and 1 fresh garlic clove cut in half. You can also add rosemary for more flavor. Cook the steak for about 5 minutes per side, turning it every 1 min. When steak is done, remove and transfer to a wooden cut board, let rest for 3-4 min.

3. Prepare the dressing  

Meanwhile, peel, then mince 1 garlic clove. In a small bowl stir together minced garlic and 4 tbsp mayonnaise. Save for later.

4. Toast Ciabatta

Halve ciabatta buns. Grill on one side using a grill pan over medium heat. Toast until golden-brown, about 3 minutes.

5. Finish and Serve

Thinly slice steak. Spread garlic and mayonnaise dressing over ciabatta halves, then top with steak and caramelized onions. Enjoy! Don’t forget to add a side to your sandwich, a healthy salad would do the deal, I would recommend Caprese Salad or Greek Salad.
