I always thought that it would take a lot of time and effort to prepare it, but the reality is much more simple and you need less than 30 minutes (someone can do it in less than 15 minutes) to get it on your plates. Welcome to Snack With Mary Food Blog. Today I would like to bring a warm and tasty Greek Chicken plate into your dining room. This dish is full of flavors, colors, and healthy ingredients. It is not that simple Greek Chicken, the beauty here is the Lemon-Yogurt sauce served with Warm Orzo Salad with Zucchini & Sundried Tomatoes. Excited? Are you ready? Let’s get it started…

Bring a medium pot of water to boil. Salt it and add the orzo. Cook it following the instructions on the pack, until just tender. Thoroughly drain the orzo, toss with a drizzle of olive oil to prevent sticking and set aside.
While the orzo cooks, in a large pan, heat a drizzle of olive oil on medium-high. Pat the chicken dry with paper towel, season with Mediterranean spice and salt & pepper. Add the seasoned chicken to the pan and cook partially covered, on both sides until golden brown (about 5-6 minutes per side). Transfer to a plate.
While the chicken cooks, small dice the zucchini. Thinly slice the sundried tomatoes. Zest and juice the lemon. In a bowl combine the Greek yogurt with lemon juice, and 1tbsp olive oil, season with salt and pepper to taste.
In a large pan, heat a drizzle of olive oil on the medium. Add the zucchini salt and pepper to taste. Cook, stirring frequently, until beginning to soften. Add the sundried tomatoes and cook, stirring frequently for a couple of minutes.
Divide the cooked orzo and vegetables between your plates. Top with the chicken and garnish with lemon zest and lemon-yogurt sauce. I would also recommend a Caprese Salad as a side dish for this meal, try it out and let me know how you liked!
Travel with us to the world of herbs and spices. Our chicken curry is going to delight your sense from the first to the very last bite. It’s not the regular chicken curry, this recipe includes Fresh Mushrooms, Bell Peppers, Zucchini Served with Basmati Rice.

Rinse rice at least 3 times in cold water and drain. Bring rice and water to boil in a pot over high heat. Reduce heat to low, cover and cook for about 15-20 min, until tender. Toss with a drizzle of olive oil to prevent sticking and set aside.
While the rice cooks, mince the onion, the garlic, mushrooms, the bell pepper, and zucchini. Dice the chicken.
In a heavy saucepan over medium heat, cook the onion and the garlic in the olive oil for 3 minutes. Add the chicken cubes and cook for 2 more minutes.
Add the mushrooms, zucchini and bell pepper and cook for 5 minutes.
Add the curry powder and mix very well.
Pour in the coconut milk and let cook for 10 min. Season to taste with salt and pepper. In a deep plate, place the rice and add the chicken curry.

One of my favorites, join me for this delicious recipe if you don’t like caramelized onion – that is not an issue ignore the onion preparation part and focus only on steak sandwich which is fantastic on its own. Make sure you select a good piece of steak to enjoy your sandwich, the better the steak the more you will enjoy your sandwich!
Tools:
Heat a large non-stick pan over medium heat. Add 1 tbsp olive oil and onions. Cook, stirring occasionally until softened, about 4 min. Add 1tsp sugar and season with salt to taste. Continue to cook stirring occasionally, until onions are golden-brown, about 10 min. When onions are done, remove the pan from heat. Add 2 tbsp balsamic vinegar. Stir together 1 min. Transfer caramelized onions into a small bowl and set aside.
Same as for the previous steap start by heating a large non-stick pan over medium-high heat. You can use the same pan just wipe carefully with a paper tower. When the pan is hot, add 1tbsp olive oil, then steak and 1 fresh garlic clove cut in half. You can also add rosemary for more flavor. Cook the steak for about 5 minutes per side, turning it every 1 min. When steak is done, remove and transfer to a wooden cut board, let rest for 3-4 min.
Meanwhile, peel, then mince 1 garlic clove. In a small bowl stir together minced garlic and 4 tbsp mayonnaise. Save for later.
Halve ciabatta buns. Grill on one side using a grill pan over medium heat. Toast until golden-brown, about 3 minutes.
Thinly slice steak. Spread garlic and mayonnaise dressing over ciabatta halves, then top with steak and caramelized onions. Enjoy! Don’t forget to add a side to your sandwich, a healthy salad would do the deal, I would recommend Caprese Salad or Greek Salad.
