HAWAIIAN BANANA NUT BREAD

1 cup granulated sugar

CRANBERRY BREAD WITH ORANGE GLAZE

YIELD: Makes 1 whole loaf or 2 mini loaves

INGREDIENTS:

Nonstick cooking spray, or 1 tsp. butter

1/3 cup vegetable oil

3/4 cup granulated sugar

1/4 cup milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon orange zest, from 1 orange

1 cup fresh or frozen cranberries, chopped

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup pecans or walnuts, chopped

For Orange Glaze:

1 cup powdered confectioners’ sugar

2 Tbsp. fresh orange juice, from 1 orange

YIELD: Yield 2 loaves or 4 mini loaves

INGREDIENTS:

1 package (18.25 oz.) white or yellow cake mix

1 package (3.4 oz.) instant lemon pudding mix

1 cup water

4 large eggs

1/2 cup canola oil

Zest from 1 lemon

4 teaspoons poppy seeds

Lemon Glaze, optional

1 1/2 cups powdered confectioners’ sugar

Juice from 1 lemon

DIRECTIONS:

Preheat oven to 350 degrees F.

In a large bowl, combine the cake mix, pudding mix, water, eggs and oil. With a hand or stand mixer, beat on low speed for 30 seconds. Beat on medium speed for 2 minutes. Gently stir in lemon zest and poppy seeds.

Pour into two greased 9-in. x 5-in. loaf pans, or four mini loaf pans. Bake whole loaves for 35-40 minutes, or mini loaves for 28-30 minutes, or until a toothpick inserted in the center comes out clean. Meanwhile prepare lemon glaze, if desired.

Cool in pans for 3 minutes before removing to a wire rack. Once on wire rack, place wax paper beneath rack and brush loaves with lemon glaze.

1 (16 oz.) tube Pillsbury Grands Flaky Layers Biscuits

1 medium apple, cored and thinly sliced

For Vanilla Glaze:

1 cup powdered sugar

1 1/2 tablespoons milk, any kind

1/4 teaspoon vanilla extract

DIRECTIONS:

For Apple Pie Pull Apart Bread:

Preheat oven to 350 degrees F.

Line a loaf pan with parchment paper and spray lightly with nonstick cooking spray. Mix sugar, cinnamon and nutmeg in a shallow dish and set aside.

Remove biscuits from tube and slice each in half, creating 16 rounds. Coat each round and each apple slice with the cinnamon-sugar mixture and layer in the loaf pan, alternating biscuit rounds with apple slices. Begin and end with the biscuit rounds.

1 3/4 cups whole milk

3 tablespoons unsalted butter

1 large egg

2 1/4 cups whole wheat flour

DIRECTIONS:

In a small saucepan, heat milk and butter over medium heat until butter has just melted.

In the bowl of a stand mixer fitted with the dough attachment, lightly beat egg with a fork. Add whole wheat flour, all purpose flour, salt, sugar, baking soda and yeast. BUTTERY NO-KNEAD CRESCENT ROLLS

YIELD: Makes 2 dozen rolls

INGREDIENTS:

1 1/4 cup warm water
2 1/4 teaspoon (1 envelope) active dry yeast
1/2 cup (1 stick) unsalted butter, melted and cooled
1/3 cup granulated sugar
1 large egg
4 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
Additional butter, for brushing

DIRECTIONS:

Line a baking sheet with parchment paper. Coat with nonstick cooking spray or melted butter.

In a large bowl, combine water and yeast. Let sit for 5 minutes. After 5 minutes, mix in butter, sugar and egg. Stir in flour, baking powder and salt with a wooden spoon until just combined. Form into a ball. Cover with a towel and let rise in a warm place for 30 minutes.

Split dough in half. Roll out each half on a floured surface to 12 inches diameter. Cut into 12 equal triangles. Starting with the widest end, roll up each triangle and place on prepared baking sheet. Cover baking pan with a clean, dry towel and let dough rise for 20-30 minutes.

When ready to bake, preheat oven to 375 degrees F. Bake rolls until golden brown, 15-20 minutes. Remove from oven and immediately brush with butter.

Rolls will keep in an airtight container for up to 3 days.

ENGLISH MUFFIN SAUSAGE, EGG AND CHEESE BREAKFAST CASSEROLE

YIELD: Makes 6 servings

PREP TIME: 20 minutes

COOK TIME: 45-50 minutes

INGREDIENTS:

1/2 teaspoon olive oil
8 oz. uncooked breakfast sausage or pork sausage
3 Thomas’ Original English Muffins, cut into 1-inch cubes
2 Tablespoons unsalted butter, melted
1/2 medium yellow onion, chopped
1/2 bell pepper, any color, chopped
1 cup shredded cheddar cheese
6 large eggs
1 cup fat-free milk
1/4 teaspoon kosher salt
1/4 teaspoon pepper

DIRECTIONS:

In a medium skillet set to medium-high heat, add olive oil. Once hot, add sausage, crumbling with a wooden spoon as it cooks. Cook until golden brown, about 5 minutes.

Place English muffin cubes in the bottom of a greased 8 x 8-inch baking dish. Drizzle with melted butter. Top with sausage, onion and bell pepper.

In a large bowl, whisk shredded cheddar, eggs, milk, salt and pepper. Pour over top of casserole. Cover baking dish and refrigerate overnight.

When ready to bake, remove from refrigerator 30 minutes before baking. Preheat oven to 350 degrees F. Bake uncovered for 45-50 minutes, or until a knife inserted in the center comes out clean. Sprinkle with green onions. Let stand for 10 minutes before serving.
